Overall, I would say that you have talent, but there is always room for improvement. One thing that I would do is study magazine scans and advertisements. By study I mean that you should find a piece that you like, analyze it, and ask yourself what makes it special. Here are a couple of examples:

This piece shows a lot of creativity. Why? They have represented a common idea/symbol (the food pyramid) in a unique way (curving paths instead of the pyramidal shape).

This one is only composed of a background, but what makes it stand out is the composition of the text, it's shape, color, size, and positioning in relation to other elements in the picture.

Now. To relate all of this back to your layout. Like erlwes said, it's a cool idea, but something about the composition seems a little bit off. For starters I would try to do a simple sketch of the layout idea on paper and see how it turns out. No need to be fancy. Look for inspiration in how others have expressed this idea digitally and plan. Next, move on to selecting your resources. One thing that comes to me when I look at this picture is the quality of the original image. It looks grainy and dull-colored. Typically it's hard to make great concept layouts from a picture like that. Instead, I would go for something more clean-cut. Have you heard of sxc.hu? It's a website that offers free, high quality stock photos. In order to make the layout more original you can use textures, as you had done in the 2nd version of the layout. One place that comes to mind is:

Lastly, I would worry about the text. Typography is something that can either make or break your image. I would focus on using the layout itself for inspiration. If the picture in your layout presents a certain shape, I would use the text to highlight this concept. Don't put it towards the side. Do something interesting with it. Like this:
